greek yoghurt dip/spread

this is a favourite dip/spread to have on hand at all times. it's good as a spread for sandwiches, wraps. veggies, baked pita chips, crackers or whatever!


Ingredients:

1 tub of greek yogurt
a 1inch chunk of cucumber
2 cloves of garlic (i use 4)
a squeeze of lemon juice
fresh-chopped, or dehydrated chives
a pinch of cumin
a pinch of cayenne
a pinch of turmeric
sea salt and fresh-cracked pepper to taste

Directions:

1. empty yoghurt into a mixing bowl. using a garlic press, press the cucumber into the yoghurt. use the garlic press to add the garlic. squeeze a quarter of a lemon into the bowl. toss in the chives and the spices. mix it all together. taste. adjust for seasonings.

we love this on pita with lettuce, herbed lebanese rice and hot peppers.


we also love it on wraps with stir-fried onions, peppers and avocado.


and again, you can use it as a dip for veggies, pita chips, crackers, etc.
no matter - it's deelish!

  2. gpw - i hope that you try this and enjoy it! and i really hope that you like the kimchi. the kimchi is a light kimchi, spicy, but not as spicy as other kimchi's. let me know how you like it. thanks for stopping by, my friend.

    All of your recipes look so good, thanks for the effort and photo's.
    Just curious, where did you learn to cook at a school or on your own? And it looks like you favor vegetarian dishes (somewhere I want to go) or am I just imagining it.

  4. thank you so much Mike! i learned to cook on my own, when i was a child i used to love watching a show called "Wok with Yan" - i loved it. then when i was living on my own, the only real time that i could "practice" new things was on the weekends. then when jam and i moved in together, i really started cooking and practicing new recipes. now that we are here on the island, i just love cooking! we don't favour vegetarian dishes on purpose, we are big meat eaters, too! but we do love a lot of vegetarian dishes and i am big on getting fresh, raw veg and fruit daily. thanks again Mike. if you have any questions, just yell.

  5. In South Africa we call this Greek dip "Tzaziki" (tzar-zik- ki). But, we add in much more cucumber.

    Delicious on a hot summers day / evening - even if cucumber and green pappers make me burp LOL

    1. Dani - i also make tzaziki - this is just a lesser form of it, if you know what i mean. i love tzaziki, too, and thank goodness they don't make me burp - bahahahahah!
